Seven hectares of vines were planted by the Conte family in 1993 alongside the old Adelaide to Willunga train-line. Named simply the â€˜Middle Tattaâ€™ block for being between 2 other vineyards on their â€˜Tattachillaâ€™ property. Apart from Shiraz there are a few rows of Cabernet Sauvignon.
Two varieties were open fermented together with this truly integrated wine produced as the final blend from the beginning. Blackcurrant, morello cherry, slight licorice & cinnamon spice softened in time with French oak barrels for 30 months. Medium to full bodied, saturating and smooth with a long black fruited finish, this wine will improve with age.
Both grape varieties were harvested at dawn into our trailers. The fruit laden 5 ton 'Gondola' trailers were then tractor towed 8km's from our Tattachilla block to the Home Block and winery in McLaren Vale. The bunches were destemmed and the berries partially crushed and put into 3 ton open fermenters. With the use of cultured yeast the Shiraz & Cabernet Sauvignon juice steadily bubbled and fizzed beneath a floating 'cap' of berries. After 14 days of plunging the cap and pumping the frothing bright red purple must, it slowly but surely transformed into vino nuovo (new wine). Maturation was in French hogshead barrels for 30 months. 7% of new French & 3% American oak was used. The wine is packaged in premium claret bottles and closured with high quality Spanish cork. To retain maximum quality and substance, it has not undergone fining or filtering. This is why a small amount of harmless, natural sediment may accumulate and adhere to the bottle as it ages.
